Start your day strong with this simple breakfast. It’s like eating a big delicious banana chocolate chip muffin, without the sugar or refined flour (with a little boost from coffee & functional mushrooms, yay!).

Baked Oats went viral on the internet about a year ago, but the simplicity and versatility of this recipe make it a keeper for the long-run. In this adaption of baked oats, we added a little coffee latte powder, some mini chocolate chips, and cacao nibs. Simply blend the ingredients together, pour it into buttered ramekins, and bake!

This recipe makes 4 7-ounce ramekins, enough for 2-4 people.
